Yes, level the priest. Priests are a very fun class to play with many
"cool" abilities. You have some nifty CC abiliies for solo and group
play (shackle, mind control, psychic scream). For some reason the priest
class just one of my favourites even though I still haven't progressed
past 40. I have been toying with the idea of leveling a priest as holy
to level 40. Not sure what I'm going to do as it's on a new server and I
don't want to waste money respeccing if I don't like it. I'm sitting at
level 17 with a few points unallocated because I'm indecisive. So I
can't actually give you advice on leveling as holy, but here is a post I
made recently which might give you ideas of a potential level 39 holy build:

Warriors on the other hand can be kind of tricky to level, needing to be
in the mobs face to do damage means the potential for more tricky
situations. They also don't have as many escape routes as a priest.
However, I only leveled my warrior to 21 before becoming disillusioned
and changing. I see that you want a "pure" build to do the best job you
can but really the advice I've seen and I would give is unless you're
only running instances *it's not worth it*. I believe I would find
soloing as prot extremely frustrating and would soon give it up. On the
other hand, fury warriors from what I'm told are great for soloing and
from my person experience grouping with them make good tanks through
most of 1-60 (probably even in outland with the right gear). They have
good rage generation talents and at lower levels tanking is more about
holding aggro from all the trigger happy dps than soaking huge damage.
More rage = more threat.

Also, you will be able to find groups more easily with a tanking class
than with a healer imo. There are alternatives to tanking, such as a
druid or paladin. Druid is a very fun class. I don't know much about
paladins but would like to hear when they get their tanking abilities as
I'm thinking about leveling one as a side project multiboxing with
another character.
